I is for Italian


I found this cook book the other day called Perfect Italian, which naturally seemed perfect for Cinnamon seeing as Italian is one of my most favorite types of food ever. I love me some pasta. The boy swears I'm trying to get him to go into a carb coma; and I just might be. I was looking through it this week trying to decide what I was going to make out of it first, and lo and behold, spinach and ricotta dumplings! I love ghnocci, so I'm thinking I must love these!


It's hard to be a vegetarian and not overload on carbs, but this added that spinach and I made a delicious squash on the side, a recipe I picked up from my cousin's girlfriend that she made for Thanksgiving.

Now let me be frank, the ricotta dumplings came with an herb and butter sauce, which was basically a stick of butter, 2 tblspoons of chopped sage, and 2 tblspoons of chopped oregano melted in a pot for about a minute, and poured over the top of the dumplings. I LOVE sage, so I thought that it tasted just fine, but in all honesty and the boy agreed, they were still a little bland. SO maybe adding some herbs and a good amount of salt and pepper to the dumplings dough before cooked would make all the difference.

The other thing; the Italians do not kid around. These things took quite a while to make. They would be a good dish to make on the weekend when you have some time to prep the spinach and whatnot, or you could prep in the morning or night before. I on the other hand, did not read the recipe beforehand (my bad) and started them on a Thursday night at 8:00, meaning we didn't eat til almost 10. I thought I was going to burn the house down near the end, so be prepared. But all in all making them isn't that complicated, there isn't a lot to it.

Here's the recipe for the dumpling dough:

What you'll need:

2 lbs fresh spinach, coarse stalks removed.
1.5 cups of ricotta cheese
1 cup of freshly grated parmesan cheese
3 eggs, beaten lightly
pinch of nutmeg
salt and pepper
3/4 a cup of all purpose flour (you may need more than this, I did) and extra for dusting

What you do:

Wash the spinach, then place in a pan with just the water clinging to its leaves. Cover and cook on low heat until just wilted. Drain well and set aside to cool.

Squeeze or press out as much liquid as possible from the spinach, then chop finely.
*Seriously, try to get out as much water as you possibly can, I didn't cause I was impatient and had to add like 2 cups of flour to make it in to a dough. You don't want to do this.

Place the spinach in a bowl and add the ricotta, half the parmesan, the eggs, and the nutmeg. Add salt and pepper to taste. Beat until throughly combined. Start by sifting in 3/4 cup of flour and lightly work into the mixture, adding more if necessary, to make a workable doughy mixture. Cover with plastic wrap and let chill for 1 hour. (See what I mean about time? This is what you could do the night before and just leave it in the fridge til you needed it)

With floured hands, break off small pieces of the mixture and roll them into small walnut sized balls. Handle them as little as possible, they are delicate. Lightly dust the dumplings with flour.

Bring a large pan of slightly salted water to a boil. Add the dumplings and cook for 2-3 minutes, until they rise to the surface (This recipe is a lot like ghnocci, if you've ever made it). Remove with a slotted spoon and set aside.

Make the herb butter, pour over the top of the dumplings and toss gently to coat. Sprinkle with the remaining parmesan and serve.



Now for the Super good squash. Take one large yellow acorn squash, cut in half and scoop out the goop. Place face down in a cookie sheet, and pour in about 1 inch of water, just enough to immerse the bottoms of the squash in water. Place in the oven on 350 for about 50 minutes, until they are soft to the touch.

Fill the squash with a teaspoon or so of brown sugar and rub it in until its partially dissolved. Pour over 3 tablespoons of fresh orange juice and fill the rest with a dollop of butter until it melts and then serve. Obviously all of this is done to taste. But it is soooo good. And really easy to do. I have them in the oven right now.

And now, the 7 things about myself...

1) I am just learning how to cook, and instead of starting out with little things and moving upward, I am tackling the gigantic, overly complicated, take a day to make meals. This being just the way I approach life, I always start at the top and work my way down. Working out? Oh I'll start my first day by lifting weights and running 20 miles on the treadmill. This makes for some serious frustrations in life but also so pretty funny stories to go along with them. Nothing is simple for me.

2) I am kind of a clean freak? I didn't think I was but now that I find myself walking around always picking up after people and rearranging things just to my liking, sweeping the floors everyday and cleaning the counter tops every morning I decided to just embrace my psycho clean nazi status. This however, does not mean I don't appreciate a good mess, or even make my own on a regular basis.

3) I adopted a dog a year ago and she's just about the most awesome thing ever. She's a half lab, half terrier, so she is basically a black labrador with a white beard, the beard is what sold me. She's my buddy and she makes me laugh all day long. I seriously have full on conversations with her, the boy thinks I'm nuts, but I don't care. Riley gets me man. She's the best.


4) I went to college preparing to go to medical school straight after. I took the MCAT, didn't like my score, wanted to take it again, had an epic panic attack, decided after wanting to be a doctor for more than half of my life, I would change my mind and reinvent my goals. This was VERY hard for me. Having spent more than 10 years defining who I was by what I wanted to do, I had to reevaluate who I was and who I wanted to be. It was humbling to say the least. But I feel good about the direction I'm going, I just wish I could get started with school like RIGHT NOW.

5) I am a shopaholic. Aside from coffee it's the only thing I can't say no to. It's a serious problem. I go in a store, just "to look" and leave with bags in my hand. When I was in highschool I even got a job working as a sales girl in a kitchen shop so I wouldn't spend my paychecks on everything in the store. Everything I use in my kitchen now I got while working at that job. I bought entire sets of everything and I couldn't even drive yet, much less own a kitchen. I love shopping in my favorite vintage stores for all my special finds. A lot of the clothes in my closet are from consignment shops, I love that I have a one of a kind piece that no one else can have. I like being unique.

6) I'm an NPR junkie. Like bad. I started listening to it after I graduated college cause I felt after being in school and studying every day of the week to doing hardly no heavy thinking at all that my brain was going to mush. I could listen to NPR all day. I love Morning Edition, Fresh Air, Talk of the Nation, All Things Considered and especially This American Life. I even listen to it at the gym. I wouldn't bat an eye if I saw Paris Hilton walking down the street but I'd be so excited to meet Terri Gross, or Ira Glass. I just seriously geeked myself out.

7) I started this blog because I lost my job as a biotech researcher for the University of California in August and I thought it would be a good way to distract myself or stop me from sitting aroung feeling sorry for myself. I am an opinionated girl, and I have a lot to say and a blog seemed like the perfect way to do it. I also wanted to spend the time I'm looking for another job, applying for my PhD and waiting to go to school trying to do things I had always wanted to do and once I go back to school will probably never have the time to do again, ie cooking, crafting, gardening and volunteering. I was thinking I would start to embrace this "domestic diva" status, so far it appears I'm more of a diva than I am domestic, to nobody's surprise at all. But I'm learning new things I can add to my arsenal of experiences.

gift giving guide for guys


Ok, so design sponge posted a piece on gifts for guys, and it seems oh so appropriate for me in all my frustration about gifts and what to get at the moment. The problem being, the boy is a lawyer and makes good money and when he wants something he buys it! And I'm a poor research scientist, one that is unemployed at the moment thanks to good ol' California and the budget crisis. So I can't buy everything, ya know? But this is a good guide. I think it's perfectly honest, particularly the gaming portion, which couldn't describe my geek boyfriend better. There have been many times I would have loved to throw that stupid Xbox out the window. The headphones seem like a genius idea...seeing as sometimes I feel like I live in Baghdad, why I even woke up to the sound of machine guns just this morning.

Bah humbug I suppose


It's been a while folks, I got back from Carmel on Tuesday, but had such a hard time getting back into the swing of things. Now we're all moving on to Christmas. Sigh. I LOVE Christmas time, it's my favorite time of year, but I'm moving slowly this year and I don't know why. Decorating the tree, and the house is one of my most favorite things to do around this time and I don't even have a tree yet. I'm on it though, we're getting one this weekend.

There are some people in my family that are so easy to shop for, I could pick out a million things I know that they will like, but there are those certain pesky family members (ahem...my dad) who have EVERYTHING and if they don't already have it, I can't afford it. I never know what to get them, and then the things I do end up buying are opened on Christmas morning, never to be seen again.

Real Simple always has an interesting article this time of year in their holiday edition of unusual gifts for everyone in the family. However, all of the things in there are soooooo dull. The only ones that stood out? Pierogis you have shipped in, and a clambake in a bucket featuring a real live lobster for $123...um no. They do have a gift idea application you can get for free for you iPhone users though, it's worth looking into. I'm thinking this is going to be a homemade Christmas. I'm working on a few special knitting projects for the sisters, and I think I'm going to bake up some special treats for a few family members and friends. I feel like I may be taking on A LOT more than I can chew (pun intended) but I am feeling up to it. And maybe this will be a lesson learned since my movement into the cooking world is a very recent one.

I hope everyone had a wonderful Thanksgiving, and I will soon start to add recipe ideas to give away as gifts for those annoying people who are impossible to shop for. Everyone likes food, especially fancy homemade food that tastes good. It seems like a win win!

I guess what it all comes down to is I love Christmas so very much, but I feel like it's coming up so fast and I've barely had time to process Thanksgiving being over and it now being December much less Christmas day being 23 days from now. Where did the time go?

Gobble, Gobble, Gobble


Having been a vegetarian for more than half of my life at this point (I refused to eat meat at 12, and for some reason never had the desire to go back, still dont) I don't eat turkey but up North where we often have our Thanksgiving dinner with family they are everywhere. I was looking up turkeys on Google today, according to the Encyclopaedia Brittanica, they've been in the USA since the 17th century, they were originally bred for their beautiful plumage. And I didn't know this but the males heads which are normally red, turn blue when they're excited.

So there's your turkey facts for the Holiday.

I'm off to Carmel for the long Thanksgiving weekend. I hope everyone has a wonderful holiday with family and friends. Eat, drink, and be thankful for all that we have been given. Enjoy.

Christmas in a pan

Some of the Persimmons were starting to go soft on me, and after looking through what I had in the cupboard and the recipes online, I found a recipe for Persimmon pudding that looked delicious.

I've never cooked with Persimmons before, my dad always made Persimmon pudding when I was younger but I never really appreciated it.

This was DELICIOUS, and tasted like Christmas on a plate, and like all the recipes I have posted was really easy to do. It took almost no time at all. Even the boy liked it, who initially refused to eat the Persimmons cause he'd never had them before and "they look gross."

What you need:

2 cups of Persimmon pulp
2 eggs, beaten
2 cups of all purpose flour
2.5 cups of white sugar (although, I have to be honest, you could probably cut back on this a bit, it was pretty sweet)
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of ground Cinnamon
1/4 teaspoon of vanilla extract
1 pinch of salt
2.5 cups of milk
4 tablespoons of melted butter

Preheat the oven to 325, butter a 9x13 inch baking pan

In a mixing bowl, combine the Persimmon pulp, baking soda, sugar and eggs. Mix well.

Add flour, baking powder, cinnamon, vanilla, salt, milk, and melted butter. Stir in to combine.

Pour into baking pan and bake for 55 minutes.


This is what it looks like when you pull it out, it kind of sinks into itself.

Serve with warm with whipped cream.

This is Fierce

YAY!!


Tonight is the Project Runway season finale!! I LOVE this show. And today, they're having a project runway marathon (will I ever get anything done?!!). This is Fierce.

I love me some Tim Gunn, big gay man crush on Tim Gunn, and would anyone look good in that pink suit other than Heidi Klum? Please.




My very favorite of all seasons was Laura Bennett. I think she's what every woman should be. She was successful, put together all the time, calm, cool, collected and even though she was the mother of 4 boys (ugh) she always looked fabulous and that things were always under control. I like that she could be a mom and still embrace who she was as a woman (that's a hard thing for a lot of women to maintain when they get married and have babies...something that makes me furious). Her entire persona took effort, and it showed; I don't like laziness.

I can't believe she didn't win, all of her clothes were deliciously tailored and represented total luxury with the fabrics she chose.

Christian Siriano was pretty fab. He's such a diva, and he made clothes with flair, and style. So pretty and all drama.




Okay, so Kenley was a total whiney beast, but she made cute clothes. And I loved all her feathers. Cute stuff. Vintage chic.





Leanne Marshall made cute clothes. Period. Pretty and put together beautifully.



Fun times! Can't wait to see who wins tonight.
